Phở Tái Bò Viên Instant Pot (Eye round and Beef Balls Pho)
So just a few lbs of Beef Bones (I can’t do oxtail because my gallbladder cannot take much fat), high pressure 30 minutes, 30 NPR and we got yummy homemade Phở Bò Viên!
Broth: 8 pieces of beef bone, 5-inch daikon (peel and halves), toast 1 onion and a ginger in the oven, 2 bags of Pho seasoning (used Pasteur brand), about 8 tablespoons of Quốc Việt Beef Pho soup base, 2 thumb-sized rock sugar.
Wash beef bones and parboil on stovetop pot (or saute mode with inner pot) for 10 minutes. Rinse well with sink water. Place all ingredients into the inner pot (I used my 8-quart). Pour BOILING water to cover ingredients. Set manual, high pressure for 30 minutes. 30 minutes NPR. Slowly release pressure by turning the knob to venting and pull out bones. Add more boiling water and season to YOUR taste with additional salt, soup base and/or rock sugar. And that’s it!
